What u describe can be post cholecystectomy syndrome - a bile acid diarrhoea, this can lead to diarrhoea and incontinence but however the anal sphincter needs to be evaluated along with the use of bile acid sequestrants

It's quite rare but can happen to have chronic diarrhoea post Cholecystectomy. The best cure again would be dietary changes. If even after dietary change you have no relief , a consultant may need to start some medical like bile sequestrants. But we also need to check if you have inconsistence issue. Do kegels exercises also

This can occur due to bile acid diarrhea or weak anal sphincter tone. Consult a gastroenterologist. Dietary fat restriction, fiber supplements, and medications usually help. It’s common and treatable—no need to feel shy.
