Definitely if you like that person First question - If he continues to take his medicine as prescribed by his doctor , visits him regularly .Just tell him to go for USG abdomen every 6 months and viral load once a year .He will be alright .He seems to be a responsible guy indeed . Second question - Don't worry if viral load is undetectable and you are fully vaccinated almost negligible chances you will get Hepatitis B .
Next Steps
Note - Hepatitis B is not deadly . Proper treatment and precautions if taken .You are all gud

Get your Anti Hbs titer done.. if its>10u/ml, you are immune(no risk of contacting virus from anyone) If<10u/ml, complete your vaccination and repeat Anti Hbs titer after 2 months of vaccination In short: go ahead with your marriage plan. Hepatitis b can be easily prevented by vaccination.
